Customers were already lining up as the Grilled Cheeserie opened its doors for the first time on the new location in downtown Franklin Tuesday morning, just minutes after the popular restaurant held a grand opening celebration in partnership with Williamson Inc.
The Franklin location at 334 Main Street is just the second brick and mortar location for the company that started as a food truck vendor in 2010. It opened its first location in the Hillsboro Village neighborhood of Nashville.
“We’ve been bringing our food truck to Franklin for years and have always had such great turnouts and responses from the folks and businesses in the area,” said Joseph Bogan, co-founder and co-owner of the business with his wife, Crystal Bogan. “And for us, it felt like a natural next step to open up a permanent location in a place that values community as much as we do.”
The 2,400-square-foot, 72-seat shop will be serving the same lineup of melted cheese delicacies that made the business so popular when it started as a food truck vendor nearly a decade ago. Bogan said the Franklin location will have 20-25 employees.
The menu at the Franklin shop will include favorites such as the Pimento Mac & Cheese, complete with house-made pimento cheese, local cheddar, macaroni, tomato and Benton’s bacon bits; the Buffalo South Melt made with pepper jack cheese, pulled organic chicken, buffalo sauce, bleu cheese aioli and pickled celery; and the B&B of Tennessee made with buttermilk cheddar, heritage bacon and seasonal jam. The “Make Your Own Melt” option will also be available for those who want to customize their order.
“This location was designed with our signature aesthetic in mind but we also pulled inspiration from the historic building and Franklin’s unique downtown vibe,” Bogan explained. “We’re also introducing a brand new kitchen model that will allow our guests to interact with our staff in a way that they’ve never been able to do before. From the time they order, customers will have the chance to follow along as their melt is being made, which is honestly half the fun! Then of course, there’s eating it which we think they’ll love as well.”
The Grilled Cheeserie is open daily 11 a.m. to 9 p.m. A third restaurant will be opening soon in East Nashville.
